Coconut Poke Cake.

By now you all know about my deep love and obsession with dessert.  I made dinner last night and wanted to find a new, yummy dessert to make.  I’ve been craving coconut cake so I searched the internet for simple recipes.  This coconut ‘poke’ cake turned out super moist and delicious, and required only a few steps!  Plus, how cute is the name??

Ingredients:

1 package white cake mix

1 14 oz. can of coconut milk

1 14 oz. can of condensed milk

1 16 oz. container of Cool Whip

1 8 oz. package of flaked coconut

Prepare cake mix according to directions on box.  Remove cake from oven, and while still hot, poke holes in the top of the cake with a fork.  Mix coconut milk and condensed milk together and pour over the top of the cake.  Let cake cool completely, then frost with the Cool Whip and top with the flaked coconut.  Refrigerate cake for 2 hours before serving.  YUMMMMM!!!!!!

    In the picture you show a can of Evaporated milk but in the recipe you say it is a can of condensed milk. Can you please tell me which one to use?

    It should be condensed milk…I realized I had bought the wrong kind and had to run to the store to finish but forgot to update the picture!! 🙂 Tell me what you think of it if you make it!
