Sugar Cookies with Royal Icing

I love this recipe because everything is made completely from scratch, and I feel such an accomplishment when I see how adorable the finished product comes out!  This icing recipe is the best I have found for decorating; you just have to put your embellishments on quick because it hardens fast!  I usually double the cookie dough recipe so I have plenty to share with friends and co-workers!

Sugar Cookies:

1/2 cup + 6 tbsp. unsalted butter, softened

1 cup sugar

1 tsp. vanilla

1 egg, slightly beaten

3 cups + 3 tbsp. flour

Preheat oven to 350 degrees.  Cream butter, sugar, and vanilla.  Beat in egg.  Gradually sift in flour.  Remove from bowl and knead on lightly floured surface.  Divide dough into 2-3 even pieces. Sandwich dough between wax paper until 1/5 inch thick.  Place on cookie sheets and refrigerate for 30 minutes.  Use cookie cutter to cut.  Place back on sheet and refrigerate for 30 minutes.  Bake 8-10 minutes.  Allow to cool before frosting.

Royal Icing:

4 cups sifted powdered sugar

3 tbsp. meringue powder

10 tbsp. warm water

Beat icing for 8 minutes.  Divide into bowls and add food coloring.  Transfer into squirt bottles.  Outline and spread frosting using a pastry tip.  *Note-this recipe makes plenty of icing even if you double the recipe for the cookies.
